Lichfield chef joins Jersey festival line-up

Lichfield 's Liam Dillon has been invited to cook at the 2023 Eat Jersey Food Festival where a group of nine top UK chefs including Michel Roux Junior are going to demonstrate their skills.

The owner of The Boat Inn, which is listed in the Michelin Guide and has three AA Rosettes, kicks off the four-day event as part of the Festival 's Famous Five dinner on Thursday 23 March at the award-winning Atlantic Hotel.

The hotel 's Ocean Restaurant has four AA Rosettes and is home to the 2023 Eat Jersey Food Festival. Michel Roux Junior and The Atlantic Hotel Executive Head Chef Will Holland have invited rising UK stars including Liam. Will has appeared with Liam at many events including the ever-popular Liam Versus series at The Boat Inn.

With a nod to the Channel Islands temperate climate and early harvests, Liam will be cooking Jersey Wagyu sirloin steaks and oysters with the first Jersey Royal potatoes of the 2023 season.

Liam (pictured) said: “It 's an honour to appear at the Eat Jersey Food Festival 2023. I 'm in some great company with some of the UK 's best chefs.

“Ingredients featured throughout the festival will be sourced from the land and waters surrounding the island wherever possible. I 'm going to be cooking some of the first famous Jersey Royal potatoes of the 2023 season plus oysters from around the island 's waters.

“By working with produce home grown, reared, and fished locally the festival will seek to minimise the food miles and environmental impact. ”

Will Holland, executive chef, The Atlantic Hotel, said: “The Eat Jersey Food Festival is a real celebration of some of the UK 's tops chefs using the finest local and seasonal ingredients.

“The Famous Five dinner is something very special for me personally as it 's getting together a group of chefs that I have worked with previously and have all gone on to do great things. I 'm so pleased to have Liam cooking the main course on our opening night. His skill and experience are a great addition to the festival. ”
